X&Y Shiraz
Fruit for this wine was sourced mainly from vineyards surrounding the winery in the Jindong area of Margaret River.
These vineyards have consistently produced intensely varietal Shiraz ideal for this blend. All vines are trained on the VSP trellis system which, when correctly managed, produces ideal fruit exposure to encourage colour and flavour development and fine, ripe tannins.
Following pressing, each batch underwent partial barrel fermentation in one year old American oak barriques and then matured for a further 12 months with malolactic fermentation being conducted in barrel and each batch being racked every 3 months.
